The evaluation of good manufacturing practices (GMP) began with the realization of a situational diagnosis, in which the hygienic-sanitary conditions of the establishment were raised, through the application of a checklist. Therefore, the objective of this work was to carry out a descriptive study, with a quantitative approach, focusing on the hygienic-sanitary conditions of the Sobral (CE) Public Market in the horticultural sector. The visit for the application of the checklist was performed on a random day, in the month of August 2018, during the operating period. The results of the checklist items were evaluated in relation to what is recommended by ANVISA, in the RDC No. 216 of September 15, 2004, which provides on the technical regulation of Good Practices for Food Services. The items were evaluated as: YES when adequate, NO when inadequate and NA (not applicable) when the question does not apply to the reality of the sector, with direct and intensive observation. The calculation of the adequacy of the establishment was done by the Total Adequacy (TAD) and the Total Inadequacy (TIN). The two totals were added to obtain the Grand Total (TG), and by means of a rule of three, in which TG is for 100% and TAD is for X, the percentage of adequacy of the establishment's production area was obtained. It was verified that nonconformities presented 61.87%, followed by 14.91% being compliant and 23.20% not applicable in the sector. The main problems found were due to the precariousness of the building, installations and inadequate storage of inputs. Since they cause harm to the consumer and society, it was proposed by the city hall a reform in the market in partnership with the city health surveillance and support of the technical manager in which was also admitted for the improvement of hygienic-sanitary conditions.
