Create a topicFruits defence mechamisms are constituted by enzymes and chemical groups, that are capable of inhibiting free radicals effects and promote benefits to human health. Tomatoes (Solanum lycopersicum) are good sources of bioactive compounds, whose effects are originated from the antioxidant activity of carotenoids (lycopene and β-carotene), phenolic acids, flavonoids and ascorbic acid. This study paired commercial tomato samples phenolic compounds profiles with their antioxidant activity using multivariate analysis to highlight the phenolic compounds most responsible for antioxidant benefits. Tomatoes varieties Khaki, Cherry, Italian and Long Life were collected in Rio Grande (Brazil) local retail. Samples maturation stage standardization was performed by analysis of colour, pH and sugar/acid ratio, following lyophilization until the analysis. The phenolic compounds were extracted with 80% ethanol and their phenolic acid and flavonoid profile were determined by HPLC-DAD. The antioxidant activity of the extracts were assessed by the DPPH, ABTS and OH radical scavenging methods. The results showed that the variety Khaki had the highest phenolic content (42.5 mg.g-1). Cherry tomato samples stood out as the highest sources of caffeic acid (104.7 μg.g-1), chlorogenic (575.1 μg.g-1) and catechin (548.8 μg.g-1). The phenolic extracts were good inhibitors of antioxidant activity, particularly the extracts from Khaki tomatoes, which inhibited 80% DPPH and ABTS radicals. PCA showed that protocatechuic acid explained well the extracts antioxidant activity. Therefore, Khaki and Cherry varieties are the best sources of functional compounds among those that impact the trade and human diet.
