Acerola (Malphighia Emarginata D.C.) grown in areas of tropical and subtropical climate and ceriguela (Spondias purpurea L.), originating in Central America, are fruits that have a high moisture content, which requires processing methods in order to reduce post-harvest losses. This work aimed to determine the chemical composition and bioactive compounds of the acerola and ceriguela mixed juice powder. The mixed juice powder was obtained in triplicate using the Mini Spray Dryer model MSD 1.0, from Labmaq do Brasil: drying air temperature 140ºC, liquid flow rate 0,60 L/h and 20% maltodextrin (10DE). The analyzes carried out were moisture (expressed in %), ashes, lipids and proteins quantified according to A.O.A.C. and the results expressed in g.100g-1, and carbohydrates calculated by difference. The total carotenoids were determined by the spectrophotometric method (450 nm) and the results expressed in (μg β-carotene/100g dry mass), total phenolics using the Folin-Ciocalteau reagent and expressed in mg/100g, and ascorbic acid (AA) was titrated using 2,6 dichlorophenol-indophenol and expressed in mg AA/100g dry mass). The acerola and ceriguela mixed juice powder showed moisture of 2.87% ±0.59, reduction of 96.64% of water. The main objective of reducing food water activity is to reduce the rates of microbiological and chemical changes. Ashes contents (1.92g.100g-1±0.08), proteins (3.60g.100g-1±0.08), lipids (2.73g.100g-1±0.11) and carbohydrates (88.86g.100g-1±0.41) were concentrated relative to the in natura juice, due to the removal of the water during the spray drying. The total phenolic content was 1832.50 mg/100g, total carotenoids 18.15 μg/100g and ascorbic acid 1923.07 mg/100g. Despite the temperature used during the spray drying, the content of bioactive compounds was high. It can be noticed that the acerola and ceriguela mixed juice powder showed good chemical characteristics and high content of bioactive compounds.
