A healthy diet must to be present in the human life since the first year of life. The parents and all the relatives are the main responsible for the child eating habits construction. The poor nutrition can cause damage in the child health, and it can affect the adult age. Iron-deficiency anemia is one of the most common diseases that occur with children. The aim of this work was create an iron fortified cookie through the bovine lung addition. Three formulations were developed: the first one with the basic ingredients in the cookie recipes (control), the others contain different lung concentrations. Physico-chemical analysis were performed in the cookie, the humidity, water-activity, protein, ash, lipids and iron concentration were determined. The results were compared with the relevant legislation. The lung quantity didn’t differ so much, for better results the lung should have been lyophilized first. According to this work It was possible to show that is possible to create an appropriate product for the children, being a suggestion to nutritional programs.
