Abstract: Chia oil (Salvia hispanica L.) is one of the main plant sources of α-linolenic acid (omega-3), however, its high unsaturation makes it susceptible to oxidation. Microencapsulation emerges as a strategy to protect these compounds and allow their application in food products.
