The 'green jackfruit meat', obtained after cooking the fruit (Artocarpus heterophyllus Lam) of the hard variety while still green, is a rich source of proteins, fibers and has a low calorie content, with the appearance of shredded chicken breast, where the flavor of the spices used in its preparation predominates. Ripe fruits are usually lost, demonstrating the importance of alternatives for their use. This study aimed to investigate the acceptance of "jackfruit meat" by schoolchildren. The fruit was sanitized and cooked in a pressure cooker until soft, approximately 20 minutes, after cooling the mesocarp was shredded and seasoned with salt, onion, garlic and tomato sauce
