CENTESIMAL COMPOSITION OF MAMMEA AMERICANA L. PULP

Resumo

The “abricó do Pará” or botanically Mammea americana L. has a strong presence of carotenoids and high humidity, being quite perishable and seasonal. Most current research has focused on the seeds of the fruit, with the need to update data on the pulp’s nutritional composition. The objective was to characterize, physicochemically, and determine the proximate composition of fresh in natura Mammea americana L. pulp acquired in the city of Belém-PA. It was determined the contents of: carotenoids a spectrophotometer; acidity (AOAC 942.15); soluble solids (AOAC 932.12); humidity (AOAC 925.10); ash (AOAC 923.03); lipids (AOAC 926.06); proteins (AOAC 920.152); total fibers (AOAC 991.43). The acidity showed median values compared to other studies of 3.23 ml of NaOH/100g of sample. This content is relevant for the aroma, flavor and color of the fruit. Acids tend to decrease with fruit maturation, as a consequence of respiration in the transformation into sugars (11.10±0.14 °Brix). The ratio of soluble solids to acidity is equivalent to evaluate flavor. For lipids (quantified as 0.86 g/100g), the ether extract showed an intense yellow color. Petroleum ether, in the extraction of lipids, also removes compounds from the sample, such as fat-soluble vitamins, lecithins, carotenoids and several pigments. Studies point to a significant amount of carotenoids, which are responsible for the intense yellow color of the ether extract. Consequently, the amount of total carotenoids found in the pulp was 5.41±0.15 mg/100g, this value has a considerable influence on the pulp color. The fiber content (2.01±0.15 g/100g) was high, which was expected, due to the pulp containing several phloem bundles. Proteins (0.52±0.01 g/100g), moisture (85.36±0.02 g/100g), carbohydrates (8.10 g/100g) and ash (0.15±0.01 g /100g) presented contents within the expected range. The result of this study aims to contribute data on the nutritional value of Mammea americana L. for the human diet.
