The consumption of ready-to-eat products, such as salted snacks, has increased because of its practicality and convenience. At the same time, the demand for healthier products in the market grows, as consumers are now worried about their well-being. However, traditional salted snacks are low in nutrients and high in salt and fat, which is contrary to the new trend. In this context, there’s a need for new products in this sector. Thus, the aim of this study was to evaluate the overall liking and consumer sensory perception of traditional and fit snacks, available in Brazilian market. Sixty-one consumers answered the CATA and attitudinal questionnaires, and evaluated the samples for overall liking, using the unstructured hedonic scale of 10 cm. According to the consumers’ evaluation, the fit snack was as well liked as traditional snacks. In addition, the samples presented different sensory profiles among themselves, and different from the product described by the consumers as ideal. The penalty analysis indicated that caution should be taken with attributes related to appearance, such as homogeneity and dark color, besides little crunchy texture, that are characteristics which a snack “should not have” according to the consumers responses. The attitudinal questionnaire showed that the majority of consumers would like that snacks were more nutritious, showing greater concern regarding the sodium and fat content of these products. Although, consumers haven’t fully believed that fit products, available on the market, are healthier than traditional ones. Perhaps for consumers better comprehension, it should be emphasized which characteristics have been improved over the traditional snacks. For new products development, such as the fit snacks, which can present different attributes from the traditional snacks, it’s evident that consumer’ studies are necessary for the new product attend the consumers expectation and be well accepted in the market.
