PH AND ACIDITY ANALYSIS OF COMMERCIALLY-AVAILABLE TROPICAL FRUIT JUICES AND NECTARS: A CLINICAL PERSPECTIVE
Gastritis and gastroesophageal reflux disease are dysfunctions that cause hipersensitivity in the gastroesophageal tract and have been associated with eating habits. These dysfunctions are characterized by inflammation of the gastric mucosa, caused by an imbalance of the digestive acids, and by the inverse flow of these acids towards the esophagus, respectively. A common dietary recommendation for patients with gastritis and/or gastroesophageal reflux is the reduction of acid foods consumption. The purpose of this study was to quantify the pH and titratable acidity in ready-to-cosume fruit juices and nectars in order to generate dietary guidelines for patients with upper gastrointestinal dysfunctions. Total acidity and pH of 35 commercially-available tropical juices and nectars were evaluated, from the five most consumed fruit juices in Brazil: orange, mango, passion fruit, peach and grape. Regarding pH, passion fruit and grape juices and nectars showed lower values (2.96±0.19 and 3.08±0.27, respectively) when compared to mango (3.36±0.27), peach (3.51 ± 0.13) and orange (3.57±0.29). In relation to the titratable acidity, orange (0.65%±0.08) and grape (0.59%±0.13) flavors had greater acidity when compared to passion fruit (0.43%±0.12), mango (0.33%±0.04) and peach (0.33%±0.03) juices and nectars. Fruit juices are popularly known as healthy beverages. However, in people with gastroesophageal dysfunctions, they can produce irritability of the gastroesophageal tract. Currently there are no ideal parameters in terms of food pH and acidity recommended for this population, and individual tolerance to acid foods is what is considered in the recommendations. Research suggests that the presence of organic acids in the food can enhance gastric acidity, which is why the acidity levels of the food are suggested as parameters for dietetic orientations. In view of the results of the present study, in clinical conditions such as gastritis and gastroesophageal reflux, the consumption of mango and peach tropical juices and nectars should be prioritized.
