BIOACCESSIBILITY OF BIOACTIVE COMPOUNDS AFTER IN VITRO SIMULATED GASTROINTESTINAL DIGESTION OF STRAWBERRY (Fragaria vesca) AND MANDARIN (Citrus reticulata) PULPS

Bioaccessibility is a crucial parameter in the evaluation of the absorption of bioactive compounds accessible during the digestive process. Vegetables are known as primary source of diet phytochemicals and their beneficial effects can be attributed to multiple mechanisms including antioxidant action. In fact, the human diet consists of complex mixtures of bioactive compounds. In order to determine bioaccessible amount of total polyphenols and total antioxidant activity in strawberry pulp and mandarin pulp there were performed simulations of gastric and intestinal environment. All the extracts obtained before and after simulated digestion were analyzed by Folin-Ciocalteu method and the results expressed in mg of gallic acid per 100g for total polyphenols and for total antioxidant activity determinations used ABTS method and the results were expressed as trolox mg per gram. The bioaccessible percentage of total polyphenols and total antioxidant activity found for strawberry pulp were 45% and 38%, respectively, for all the three batches analyzed. For the three batches of mandarin pulp the bioaccessible percentage of total polyphenols and total antioxidant activity were 35% and 28%, respectively. Bioaccessible percentage in all treatments were higher than 25% suggesting that strawberry and tangerine pulps can be a relevant source of natural bioaccessible antioxidants and their daily intake may contribute to protection against various diseases.
