PRODUCT DEVELOPMENT WITH WHEY PROTEIN ISOLATE TO ELDERLY

The increase in the elderly population is a general trend. Busy daily routines combined with changing eating habits lead to a growing demand for easy, nutritious and tasty food. Considering these tendencies, this project proposes the development of a powder milk formulation for instantaneous preparation of a “Shake” beverage with 25% of the Daily Recommended Intake of vitamins and minerals for aging consumers. Two formulations (F1 and F2) were prepared, with1% and 2% strawberry pulp content, respectively, and include as ingredient Whey Protein Isolate (WPI) and fructooligosaccharides (FOS). Determination of centesimal composition was conducted according to AOAC. Brazilian RDC 122 of 2001 was adopted as standard recommendation for microbiology analysis. The formulations were submitted to sensorial analysis by affective test of acceptance, using a hedonic scale of 9 points with untrained judges between 18 and 40 years old. According to the results it was possible infer that the formulations differ in all of the following parameters: moisture 6.7 vs. 7.0% (F1 vs. F2), ashes 5.5 vs. 6.1%, protein 18.3 vs. 11.9%, lipid 1.3 vs. 2.1% and carbohydrates 67.8 vs. 73.0%. The difference between values of protein is due to the fact that F1 has higher WPI content. There is no specific legislation for this kind of product, but the nutritional values in the products were considered appropriate for the targeted age group. Microbiological test results were found to be in accordance with legal standards. For sensory analysis, there was no significant difference between samples. The formulation with greater acceptance was F1 with 78.5 %, also presenting higher average impressions regarding color, taste, texture and overall impression.
