Development of banana (Musa spp) inflorescence base Jelly with functional characteristics

Fruit growing plays an important role in Brazil, becoming the 5th largest world producer of bananas. The inflorescence of banana, also known as navel or heart, is popularly used as home remedy, especially in syrups for respiratory diseases, having a considerable acceptance. In the cultivation process, the inflorescence of the banana plant is put away by the producer for a better fruit quality performance. Considering the popular heritage, the objective of this study was to develop a jelly on a banana inflorescence base (Musa spp). The phytochemicals was studied, in the raw material. The presence of tannins, anthraquinones, triterpenoids and flavanones were observed. The determination of total phenolic compounds in the banana plant inflorescence (BI) found 175 mg.100g-1 and, an antioxidant activity of 21.5% inhibition of DPPH with IC50 = 0.263 μL.mL-1, and 3,095 µmol equivalent trolox /µL comp. Phenolic compounds were screened, at zero time and after 6 months of storage, in the jellies, by Folin-Ciocalteu reaction. It was possible observe an increase of phenolic after storage in both CJ (365 - 669mg.100 g-1) and DJ (683 - 825mg.100 g-1). In the total phenolic analysis, a % inhibition of DPPH in CJ (19.4 to 72.6%) and DJ (54.7 to 82%) followed the same behavior, also demonstrating consistency with the practical formulations. The CJ Trolox equivalent (1,255-1,014μmol/uL) and DJ (3,859- 1,161μmol/uL) demonstrated increased antioxidant capacity after 6 months of storage. The antihypertensive activity was determined by IECA content, having DJ (76.2%) showing better inhibition of IECA results than the other jelly (52.3%), CJ. The sanitary conditions were determined by microbiological analysis, formerly the sensory analysis of acceptance, which was obtained p <0.05, and favorable results for most of the attributes tested, in both jellies. The commercial validity was determined by accelerated aging. A 12 months validity was obtained.
