Edible coatings are an environmentally friendly technology which consist of a thin layer of edible material applied to the surface of a food product to preserve freshness. They can be applied on many products to control moisture transfer, gas exchange or oxidation processes. Moreover, a major advantage of using edible films and coatings is that several active ingredients can be incorporated into the polymer matrix and consumed with the food, thus enhancing safety or even nutritional and sensory attributes. It is well known that Pomegranate peels have bioactive compounds presenting antioxidant and antimicrobial activities. This study aimed to develop an edible coating based on gelatin containing Pomegranate peel extracts and to evaluate its efficiency in preserving fresh guavas under refrigeration. Guava samples were submitted to four treatments: control (CL) (without coating), coating of gelatin (GEL) (10g/100mL), coating of gelatin solubilized in a solution (1:1 water extract: distillated water) (50E) and coating of gelatin solubilized in a solution (100 % v/v of extract) (100E). Fruits were washed and dried under room temperature. Fresh uncoated guavas were used as control. Trials were immersed for 1 minute in film-forming solutions with different compositions. The fruits were dried at room temperature (25°C) and stored at 5°C ± 0.2°C for 20 days. Several follow-up analysis of ripening guava (for all treatments) were held from 4 in 4 days. The covers were effective, increasing the shelf life of guavas during the studied period. Microbiological analysis showed that the covers were also effective in preserving as the total count of thermotolerant coliforms at 45 ° C, with a lower result than 1.0 x 10¹ CFU / g and is also efficient in relation to total count of molds and yeasts while the control fruit had apparent contamination since the naked eye at the end of the experiment.
