Resumo

The Cerrado is the second largest Brazilian biome and adds a wide variety of species.
Some of them are known as a source of compounds of high biotechnology interest due to its functional properties added to the potential to add value and conserve the biome biodiversity. Pouteria ramiflora (Mart.) Radlk, popularly called of “curriola”, is known for the production of edible fruits. In order to take advantage of part of this fruit that would be discarded, its seeds has a possible potential for the development of a soluble tea due to its functionals and organoleptic properties, what represents a significant economic value. In the face of this, the aim of this study is to perform physical-chemical characterization of the lyophilized seed in natura, to define the chemical marker of plant by HPLC/DAD analysis and evaluate the antioxidant capacity aqueous extract of the seed obtained by infusion with distilled water at 70°C followed by vacuum filtration through of phosphomolybdenum complex and oxygen radical absorbance capacity (ORAC) methods. The lyophilized seed showed total titratable acidity of 0.30%, pH of 6.53, soluble solids of 1335 and with a moisture contente of 4.80%. The yield of the aqueous seed extract was of 6% and its chromatographic profile revealed the presence of catequin in a quantity of 8.13 μg/mL. The same extract had good ability to inhibit the phosphomolybdenum complex formation (126.35 AE μg/mg sample) and ORAC (95.38 TE/g). The results of this work highlighted that the aqueous seed extract of P. ramiflora is a potential future for development of soluble tea due to its phenolic nature, which could be an economical source of natural antioxidants, in addition to being an excelente option for reusing a by-product.
