PARÂMETROS BROMATOLÓGICOS DE ALBÚMEN E GEMA DE POEDEIRAS COMERCIAIS DE DIFERENTES IDADES

The experiment was conducted in the Poultry Sector and in the Laboratory
of Bromatology of the Federal University of Espírito Santo - Alegre Campus. Were 720 eggs from commercial Bovans strains of six different ages obtained from
commercial farms in the Santa Maria de Jetibá - ES region were used. It was evaluated the chemical composition of the albumin and yolk of 20 randomly selected eggs for each age of laying hens (22, 39, 53, 67, 75 and 122 weeks) and storage period (0, 7, 14, 21, 28 and 35 days of accommodation), totaling 120 eggs per poultry age. A variance analysis was performed with a 5% significance test (SNK) at SAEG, where the bromatological composition of the eggs - Crude protein (PB), ethereal extract (EE) and dry matter (DM) were evaluated. Albumin and egg yolk at different egg laying periods of different ages at room temperature. There was a significant effect on PB, EE and MS for the different ages of laying hens in the average lodging time, noting that older laying eggs and longer nesting periods may influence the solids content of these eggs, thus altering the quality of the eggs, themselves.
