Low-Field nuclear magnetic resonance spectroscopy (LF-NMR)
relaxometry is a source to evaluate food samples. Because NMR
offers a great variety of relaxation parameters. According to Tavares
group, proton-spin-lattice relaxation times have been applying, as a
methodology to characterize the molecular dynamics and
homogeneity of foods, soils and others. From this parameter one can
obtain as much information as possible from the molecular
organization, water diffusion, intermolecular interaction, and the
domain formation.
In this innovative study was used the measurements of spinlattice proton relaxation, T1H parameter, for the soil before platting
functional spices and enrich this with natural bioactive,
nanoencapsulated. The initial soil analysis showed that the soil
presented a proper molecular organization and the granulometry of it
permits good water permeation, with is good to not accumulate much
water in it, but may promote the nutrients lixiviation. Some functional
spices were cultivated and the nanoencapsulated materials containing
oreganun antioxidant were added into the soil regularly. The foods
that received functional spices antioxidant have the oil quantity
increased comparing to the others that did not receive the
nanoencapsulated materials. So, the NMR relaxometry from the
proton spin-lattice relaxation time measurements was able to
separate the domains of each principal functional spices and showed
the difference in them.
