EFFECT OF NITROGEN SOURCE ON TALAROMYCES AMESTOLKIAE COLORANTS

In the last years, there is a trend towards the replacement of synthetic colorants by natural ones, mainly due to the increase of consumer demand for natural products. This work aims at the investigating the production of natural colorants by submerged culture of Talaromyces amestolkiae under different nitrogen sources. Furthermore, the color characteristics of colorants produced were analyzed by colorimetry and fluorescence. These experiments showed that organic nitrogen sources promoted the highest yellow (17.35 AU420nm), orange (18.37 AU470nm), and red (25.42 AU500nm) colorants production. Moreover, the colorants derived from different nitrogen sources had various shades of orange and red; and the fluorescence spectra of T. amestolkiae colorants were similar to yellow fluorescence from Monascus spp.. Thus, the present study shows that the organic nitrogen source is the best one for natural colorants production.
