The objective of this study was identify by molecular taxonomy the microorganisms present in meat processing industries. This study was developed in a meat processing industry from Ponta Grossa (PR), the samples were collected using swab method. The decision-making diagram was used to choose places to be collected. Initially, the samples were evaluated by conventional microbiology and then a PCR reaction was made aiming samples taxonomy. After the genotypic identification, the genus findings were Escherichia, Brevibacillus, Proteus, Bacillus, Citrobacter, Enterobacter, Klebsiella, Hafnia, Shigella and Providencia in different stages of meat processing. It can be concluded that the pathogens microorganisms were result of an inefficient sanitation and inadequate manipulation by collaborators.
