The search for novel solutions aiming to treat and to add value to industrial byproducts has motivated countless researches in biotechnological field. In this light, there are studies that aim at the production of cellular biomass from industrial wastes. Thus, this study aimed the production of cellular biomass by using semolina and wheat germ as substrates. In order to evaluate the protein enrichment, fermentations of 30 and 60 h were performed, from the mixture of the substrate, previously hydrolyzed (semolina and wheat germ). The obtained results of protein enrichment were superior to those of the literature, in both times of fermentation. However, cell growth was only close to the value obtained in the literature for 30-h fermentation. In general, this study evidenced the potential and feasibility of the use of residues from mills for the production of protein biomass, giving an adequate and economic destination to these industrial byproducts.
