EVALUATION OF BIOACTIVE COMPOUNDS, AND ANTIOXIDANT ACTIVITY IN TRADITIONAL AND DECAFFEINATED COFFEE BLENDS

Abstract

Coffee is a product that is part of the global culture and economy in the daily lives of many coffee lovers. Within the complex chemical composition of coffee, the best-known molecule is caffeine. Caffeine is an alkaloid considered the most consumed psychoactive substance in the world, and up to 99 % of all caffeine ingested can be rapidly absorbed into the bloodstream. Although caffeine is a bioactive compound with many beneficial properties for health, for some consumers suffering from sleep deprivation, the effect of caffeine seems to be more intense and long-lasting due to this psychostimulant effect. Therefore, in this study we investigated the bioactive properties of two types of decaffeinated coffees compared to three types of traditional coffees. The antioxidant activity (AA) by ABTS (730 nm), total phenolic compound (TPC) content by the Folin-Ciocalteau method (760 nm) and melanoidin content (470 nm) were evaluated by spectrophotometric methods. For AA, there was no significant difference between any of the samples. For TPC, a traditional coffee sample obtained the highest value (48.14 mg g-1 GAE), followed by a decaffeinated coffee sample (37.15 mg g-1 GAE). The two lowest values ​​obtained for TPC were from the other two traditional coffee samples. For melanoidins, a traditional coffee sample obtained the highest value (0.337 Abs). The other two traditional coffee samples did not show significant differences from the decaffeinated coffee samples. Therefore, when observing the data set, decaffeinated coffee samples, as well as traditional coffees, are an excellent source of bioactive compounds. Therefore, decaffeinated coffees are an ideal alternative for consumers who feel sleep deprived due to caffeine, but also want to continue enjoying the beverage and taking advantage of the many health benefits provided by coffee.
