The IX International Conference on Food Proteins and Colloids (CIPCA 2023) was held in the city of Rio de Janeiro, from May 9 to 11, 2023.

The event featured the presentation of technical-scientific works in oral form and posters, distributed in sessions involving the following topics:

  • Interactions between biopolymers and their impact on the structure;
  • Interfacial Engineering;
  • New processes and ingredients;
  • Food colloids as a vehicle for bioactive compounds: digestibility and bioavailability;
  • Food colloids and health (bioactive peptides, allergenicity);
  • Colloids for edible films.
