PRÁTICAS DE MANEJO PRÉ-ABATE E QUALIFICAÇÃO DE FUNCIONÁRIOS EM ABATEDOURO FRIGORÍFICO DE BOVINOS

In order to improve meat quality and economic performance, it is of the utmost importance to train and educate employees in cattle slaughterhouses. In this sense, the objective of the project was to verify and evaluate the management carried out by employees already trained in pre-slaughtering cattle. The work was carried out in a slaughterhouse located in the Pantanal region of south-mato-grossense. The quantification of falls, slips, use of the electric stick, vocalization and inadequate flag were performed. We are be able to observed that the brete region is the only one with a large number of vocalizations (9,8%). The occurrence of falls in the corridor, shower and brete were, respectively, 1,8, 2,5 and 4,1%. Slips occurred in higher incidence in the corral (14,9%) and brete (7,8%) areas. The average usage of the electric baton in the shower was low (0,011%). As for brete, they are on alert (3,309). The majority of the occurrences studied occurred more frequently in the brete.
