Resumo

This study aimed to evaluate the quality of honey from Apis mellifera, commercialized in Chapecó, Santa Catarina State, and to verify if the commercialized honey is in agreement with the Brazilian legislation. We evaluated thirteen samples of honey sold in the city of Chapecó. We purchased samples in local trade and sent to the laboratories of the State University of Santa Catarina. The parameters analyzed were HMF, Fiehe reaction, color (by spectrophotometer and photocolorimeter), according to IAL (2008). Results were submitted to analysis of variance and the mean test used was Tukey at 5% significance. Nearly of 64% of samples are not in agreement with the Brazilian legislation, as shown by HMF measures. The color of honey range from light to amber. We concluded that honey shown HMF values inappropriate for consumption, indicating bad storage conditions or adulteration signs.
