CORRELAÇÃO DOS DESCRITORES DE FORMA DA REGIÃO DO PERNIL COM SUAS CARACTERÍSTICAS QUANTITATIVAS DE CORDEIROS DESLANADOS

The aim of this study was to evaluate the correlation of the shape descriptors in shank region obtained through image processing with quantitative parameters. Data from 72 lambs carcasses were used. Thereby obtaining the shank weight, yield, tissue composition (muscle, fat and bone) and eight shape descriptors from image processing in the lateral view of the shank region. Pearson correlation was performed among the characteristics. The Pearson coefficient for the dimensionless descriptors, showed there was no correlation (p> 0.05) of the convexity variable. In addition, there was a positive correlation (p <0.05) of the weight of the leg, muscle, bone and fat with the descriptors. Therefore, the shape descriptors of the shank region obtained through the carcass imaging are attributes of great relevance in the determination os primal cuts characteristics.
