Resumo

The objective was to measure the quantitative characteristics in the carcass of finishing bulls submitted to chemical castration (Immunocastration) or physical (Burdizzo). Twenty-six Brangus cattle were used in the confinement system, 13 of which were chemically castrated (Immunocast) and 13 physically castrated (Burdizzo). The variables evaluated were: slaughter and carcass weight, carcass yields and proportions of bone, muscle and fat. It was observed that the castration method did not influence the slaughter weight. However, immunoassays presented higher carcass yields when compared to animals castrated with burdizzo, with values of 58.11 and 56.71% for hot carcass yield and 55.77 and 54.44% for cold carcass yield. Chemical castration (Bopriva) has higher values for cold and warm carcass yield when compared to physical castration (Burdizzo).
