Abstract

O presente trabalho foi realizado com o objetivo de conhecer melhor as características de crescimento da Saccharomyces cerevisiae de característica floculante. Assim, o estudo se refere ao tempo de geração, o qual tem grande importância na fermentação alcoólica para obtenção de um produto de melhor qualidade.
