Abstract

Lipases (triacylglycerol acyl hydrolases, EC 3.1.1.3) are enzymes that catalyze the hydrolysis and synthesis of triacylglycerols. The objective of the present work was to evaluate the influence of different process variables on lipase production by Aspergillus niger mutant 11T53A14 in solid state fermentation. A central composite rotatable design was carried out and three independent variables were evaluated: volume of HCl solution, nitrogen (ammonium sulfate), and coffee grounds concentration. The experimental design showed the variables HCl solution volume and nitrogen concentration were statistically significant with the positive effect for the production of lipase. The coffe grounds presented negative statistical significance, however in lower concentrations it can be used as inductor of lipase production.
