The proteases are enzymes with high catalytic potential, capable of hydrolysing peptide bonds in proteins, being widely used in different industrial sectors, such as the production of detergents, leather, food, pharmaceuticals. This work describes selection of microorganisms and solid support for protease production using filamentous fungi (Penicillium sp. Fusarium sp. and Monilia sithophila) and inert supports polyurethane foam, ceramic fiber and glass wool. Among the SSF performed it is possible to highlight the protease production of Fusarium sp. in SSF with ceramic fiber represents the best results with a maximal protease activity of 351 kU / kg (addition 1.0 g/L of L-asparagine) and 321 kU / kg (absence L-asparagine). Regarding the fungi used, Fusarium sp. generated a protease production 1.5 times and 3.5 times greater than Penicillium sp. and Monilia sitophilia. Regarding the inert substrates used, the ceramic fiber was the highlight enabling to mean protease production 1.3 times 1.5 times higher than when produced using polyurethane and glass wool, as inert support.
