SOYBEAN GERMINATED GRAINS AS A SOURCE OF HYDROLASES

Amylases and proteases are among the most important hydrolases for applications in biotechnological processes. The search for new sources of enzymes broadens the spectrum of possible applications and products. In the present study we report the partial identification of protease and amylase profile from soybean seeds at different germination times. Germination process in seeds could mobilize many enzymes for the plant transformation. The germinating of BRS 257 soybeans (Glycine Max), conducted here for up to 84 hours, could provide useful enzymes in biocatalytic hydrolysis process. The results show that the germinating soybean seeds could be exploited as different enzymes source, demonstrating an increase in amylolytic activity and a change in the proteolytic profile compared to ungerminated grains. Soybeans at different times of germination may behave as distinct sources of different hydrolases.
