LECITASE® ULTRA LIPOLYTIC ACTIVITY STUDY UNDER DIFFERENT pH AND TEMPERATURE CONDITIONS
Lecitase® Ultra is a phospholipase A1 (EC 3.1.1.32) which has lipolytic activity. The objective of this work was to study the joint influence of temperature and pH to determine the maximum lipolytic potential of comercial phospholipase Lecitase® Ultra by a statistical design through a CCD (Central Composite Design), in which the pH ranged from 6.01 to 7.98 and temperature from 27 to 47 °C, totaling 11 experiments. The values found that maximized lipase enzymatic activity were pH 6.61 and temperature of 47 °C. The analysis of the response surfaces and contour curves of lipolytic activity indicated an optimum working region for pH between 6.3 and 6.8 and temperatures above 47 °C.
