EFFECTS OF THE PROCESS PARAMETERS IN THE ENZYMATIC EXTRACTION OF INSOLUBLE DIETARY FIBERS FROM MACAUBA (Acrocomia aculeata) KERNEL BRAN
The aims of the study were to investigate the enzymatic extraction of insoluble dietary fiber (IDF) from macauba kernel bran (MKB) and to evaluate the influence of different process parameters in to the efficiency and purity of dietaryfiber extraction.An experimental factorial design (24-1) was used to identify the effects of the following parameters, temperature, reaction time, proportion of amylase:protease and proportion of enzymes:bran, in different response functions, as extraction efficiency (EF) and extract purity (EP).The maximum value obtained to the EF was 94.44% associated with the maximum EP-value of 73.0%. From the experimental factorial design, none of parameters had significant effect on EF, but for the response function EP, only the time extraction parameter had significant effect, in the range of parameters investigated.
