Development of Equipment Using High Voltage Pulses Aaplication to Reduce The Number of Actives Microorganisms
Microbial load reduction treatment processes are important in various sectors of industry, especially in food and biotechnological processes. Treatment by Pulsed Electric Fields is an alternative that has been studied, being a non-thermal process that could cause few changes to the original structure of the sample. This work aims the installation and operation of a device for microbial load reduction treatment by pulsed electric fields. An investigation of the operation of the equipment was developed, evaluating the influence of factors such as voltage and frequency of the pulse and configuration. Comparative tests with the pasteurization process were implemented using Enterobacter aerogenes bacteria. The electric field used was 12 kV/cm, the frequency of application was of 550 Hz, and treatment time was of 2.5 and 5 minutes using electrodes of stainless steel. By building an equipment with a modulation circuit for pulsed electric fields, with the use of high voltage diodes and the application of monopolar pulses were obtained consistents results, reaching a reduction of cells forming units of 85.5% when using stainless steel electrodes and treatment time of 5 minutes, compared with a test without treatment, demonstrating the potential of this equipment.
