Defining the optimal price for a product is a challenging task that can impact a company's competitiveness and profit margin. This process is present in several industries such as aviation, e-commerce, hospitality, and the financial market. A crucial part of price optimization is defining the elasticity curve that models the relationship between price and demand. In this work, we propose a non-linear mathematical programming model for the fresh meat segment and analyze the results when considering single curves and families of curves to model the elasticity between price and demand.
