DEVELOPMENT OF A SIMULATION MODEL TO IMPROVE EFFICIENCY IN RICOTTA PRODUCTION

This study aimed to improve ricotta production in a dairy in Minas Gerais through simulation. From the collection of data from the process, critical points that limited production efficiency were identified. Using specialized software, a virtual model was developed that represents all stages, from the reception of the milk to the cutting of the cheese. This modeling allowed to simulate different scenarios and identify improvements in the process. The results indicated a reduction in production time, a decrease in waste, and an increase in production capacity. In addition, the model makes it possible to test new strategies before practical implementation, reducing risks and optimizing resources. In this way, simulation proved to be an effective tool to improve the efficiency and competitiveness of the dairy.
