The growing concern about the environmental impact of agriculture, responsible for deforestation in Brazil in 2022, highlights the need for mitigation strategies, such as sustainable food choice. This study aims to create and analyze omnivorous, vegetarian and strict vegetarian diets, comparing their CO_2 emission values. For this, an optimization model was developed based on the NSGA-II genetic algorithm that seeks the best solution with the objectives of minimizing CO_2 emissions and minimizing the error for the caloric goal, respecting nutritional restrictions. The results showed that even with the search to minimize the emission of CO_2, the reduction in emissions from the omnivorous diet for the strict vegetarian diet is 49%, and for the lacto-ovo vegetarian diet of 39%.
