The use of natural products plays a key role as resource of new active pharmaceutical ingredients to development and manufacture of medicines products. Besides the traditional strategies to research new compounds, the whole plants can also be used as active ingredients. However, the processing of such matrices or their derivatives remains as a technological challenge. Thus, this study aimed to study oil-in-water emulsions containing extract from pods of Libidibia ferrea (JUCÁ). The aqueous phase [aqueous dispersions of hydroxypropyl methylcellulose (HPMC: 0.5-3.0%; w/w) containing extracts (5%; w/w)] and the oil phase (Miglyol 812, 5%; w/w) were heated (40 °C) and homogenized by using an ultra-turrax. The systems were successfully obtained and characterized for 90 days by measuring of: macroscopic analysis; pH; droplet size; zeta potential; and, polyphenol content. They showed satisfactory stability when stored at 25 °C, good viscosity and low deformation.
