Mastitis are inflammations of mammary glands, which may present themselves in the clinical or subclinical form showing white blood cells in milk. Bovine Mastitis is considered one of the main problems of infectious bovine order milk producers, caused by Staphylococcus aureus are the most prevalent worldwide. As for the aspect of public health, mastitis deserves importance due to the potential risk for transmission of pathogens to man, for dairy products. This condition can be caused by factors of management of the herd. The Ministry of agriculture, livestock and supply reports on clinical mastitis there is presence of clinical signs in animals as: redness, pain and fever that characterize the inflammatory process. In addition to the loss in production, the quality of milk is also affected in relation to sensory characteristics, nutritional, physico-chemical and microbiological characteristics (taste, reduced nutrient quality content, presence of lumps and pathogens). The present study aimed to verify the conditions of management of dairy cows on a farm in the interior of Bahia, as well as the observation of the handlers during the handling of the animals and the milking room. The biological material collected from the teats of cows, milking machine and grass where cows remain in period of rest, was carried to the lab for analysis, using specific culture media for some micro-organisms. During the observation have been identified inadequacies in the handling of animals, sanitizing the milking room and facilities. Through observation was verified the presence of several factors considered conditions for Bovine Mastitis, as the management of milking, milking and hygiene, the environment and equipment. After laboratory testing, were found micro-organisms able to promote the bovine mastitis, being analyzed in liner with a number of UFC/cm2 that showed higher quality standards for surfaces that come in contact with the food (milk) and may change the microbiological quality of the final product, making it unfit for human consumption. The rest of the animals also presented microbial load compatible to causing bovine mastitis. Becomes essential that there is a technical assistance to milk producers meet and are trained Agricultural practices, thus avoiding the appearance of bovine mastitis and reduce losses of products, ensuring a better quality of milk.
