Correlação entre biometrias corporais e rendimento de carcaça com parâmetros de qualidade de carne.

Resumo / Abstract: Goats with superior body size present better carcass. However, the associations between body and carcass biometrics with goat meat quality have been insufficiently researched. Therefore, the objective of the current was analyze the correlations between body and carcass biometrics with goat meat quality. For this purpose, 18 male young Saanen goats were confined. The experimental period was 121 days and at the end, the animals were slaughtered. The body volume, body compactness, cold carcass yields, meat texture, cooking loss, meat protein content, meat mineral content and meat moisture content were measured. There was tendency (p<0,10) of a positive linear correlation between body compactness, cold carcass yields and meat moisture content. Goats with higher body and carcass biometrics could present succulent meat.
