Resumo

Chronic non-communicable diseases are the leading cause of mortality in the world, therefore, in recent decades, scientific research and population studies have sought to determine the role of diet in the prevention and control of morbidity and premature mortality. In this sense, milk has been extensively studied, as from the point of view of public health; it occupies a prominent place in human nutrition and Brazilian food consumption. However, the demand for alternatives to bovine milk has increased, mainly for plant extracts. The present study aims to evaluate the antioxidant activity of milk and vegetable milk extract. The analyzes were carried out in triplicate and the samples acquired in supermarkets in the region of São Paulo, the drinks analyzed were: UHT whole milk, UHT skimmed whole milk, soy milk and almond milk. The evaluations of the antioxidant activities (AA) of the beverages were investigated through ABTS radical scavenging capacity tests. The total phenolic content was determined by the Folin-Ciocalteau method. The phenolic concentration ranged from 17.26 mg and 27.25 mg of chlorogenic acid/1000 mL of beverage, highlighting that the highest value was for soy milk and the lowest for almond milk. The AA method for ABTS ranged from 64.88 to 100.08 mmol of Trolox / 1000 mL drink, with the highest value also for the soy plant extract and the lowest for UHT skimmed milk. We concluded that soy milk had better antioxidant activity and higher total phenolic content, which could be a good alternative for replacement in the population's diet, to contribute to the intake of foods source of polyphenols and antioxidant activity. In the meantime, further studies aimed at its antioxidant potential are needed.
