Resumo

The anaerobic digestion (AD) of jabuticaba peels can produce a methane-rich biogas, which can be subsequently converted into electric energy to supply the jabuticaba juice and jelly processing. This study aimed to calculate the potential of electricity production from AD of dried jabuticaba peels. The theoretical potential of methane was calculated considering the ratio of methane volume produced per day by the Organic Loading Rate (OLR). An Up-Flow Anaerobic Sludge Blanket reactor, with a maximum capacity of 40 m3, fed with 10 m3 of peels and a Hydraulic Retention Time of 25 days was considered. The results showed a Chemical Oxygen Demand (COD) of 1217.83 g O2/kg of dried jabuticaba peels and a theoretical methane production of 1.29 m3/day. The methane can be used for electricity generation reaching 4.32 KWh/day. Electricity costs in an industry can account for up to 40% of the production costs, with a small factory consuming 500 to 750 KWh/month. The energy consumption in the food industries is high, consequently the recovered energy is of great interest because of the energy costs avoidance. The study concluded that AD technology could increase alternative sources of electricity generation for the food industry and contribute to the diversification of the Brazilian energy grid.
