The “Fast” Preference Mapping is a fast descriptive method that use the check all that apply (CATA) instead of quantitative descriptive profile (QDP) applied on conventional Preference Mapping (p-mapping). The aim of this study is to compare both methods with their results, resource and time to offer a faster alternative to product development. Six samples of market sauces were evaluated, pre-selected by Napping method. For the QDP, a trained panel (8 assessors) was created using the panel check software for training and monitoring. The 19 descriptors raised on QDP were also used for the CATA analysis performed after the liking applied with consumers for both techniques. Comparative analysis were made between the graphs obtained by Landscape Segmentation Analysis® (IFProgram®). The proposed fast methodology provided some attributes positioned differently from the conventional map possibly to detailed evaluation achieved only with a trained panel. The results for the fast methodology also presented significance (p < 0.05) for fourteen drivers of liking (DOL) against thirteen for conventional p-mapping. However, ten of them were equal for both methodologies. The product adjustments to achieve a LO were also very aligned, with some deviations for the attributes that were difficult to be evaluated by consumers without a deeply explanation. All the process for the proposed method took half of time comparing to the p-mapping, besides no need to train a panel. The “Fast” Preference Mapping has the potential to present similar map, LO and DOL reducing time and resources for sensory tests. On the other hand, do not have the dimension and detailed information as the Preference Mapping. Because of pros and cons, depending on the objective, resource and time it is possible to determine the most appropriate method to use.
