Abstract

The Central-West region has the climate with the highest temperature during the day and cooler nights, this climate leaves the soluble solids content, bioactive compounds increased in relation to the other producing regions. The residues produced in the process of vinification, are sources of phitochemicals, which are not fully extracted during the winemaking process. The objective of the present study was to evaluate the effect of ingestion of wine residues, produced in the Center-West of Brazil, on body weight gain, daily intake, Lee index, total leukocytes, total phenolic compounds and antioxidant capacity by DPPH and ABTS in feces of Wistar rats at zero times, 15 days and 30 days submitted to diets. For the data analysis, the statistical analysis Variance Analysis (ANOVA) was used, followed by multiple comparisons by the Tukey test. For all tests, p <0.05 was considered as the limit of statistical significance. Thirty male rats were randomly divided into three groups: Control (n = 10), G1 (n = 10) and G2 (n = 10). The control group received standard diet, G1 and G2 received ration supplemented with 100 and 300 mg of residue of grapes / Kg of body weight, respectively, during four weeks. The results obtained in the research demonstrate significant values of weight gain in G1 with mean of 40.5g ± 15.4g. In relation to the intake, G2 presented difference, obtained a lower feed intake with a mean of 20,3g ± 0.8g when compared to the control group, suggesting that the higher concentration of grape residues may have influenced in some way the satiety of the animal. The Lee index, there was no difference between the three groups. Regarding the number of total leukocytes, G2 presented higher values with a mean of 9975 ± 1848.9. Regarding the phenolics in the time of 15 days, a statistical difference was observed between the groups G1 and G2 while in the time of 30 days there was no significant difference between the three groups. The antioxidant capacity evaluated in the DPPH assay at time zero was not significant difference between the three groups; in the times of 15 and 30 days, there was a difference between the G1 and G2 groups indicating a higher concentration of antioxidants present in the feces. In the ABTS results there was no significant difference at zero times and 15 days between the three groups, but there was a significant difference when compared to the Control group with G1 and G2. . It was concluded that the group that fed greater amount of grape marc (G2) gained less weight, but this group showed an increased total number of leukocytes suggesting an intense immune response.
