The overconsumption of dietary fats is associated with the activation of inflammatory pathways in driving aspects of metabolic dysfunction. Triacylglycerols (TAG) supply approximately 95% of dietary lipids, however it is intriguing that there little is known about their biological and nutritional importance based on their stereospecific compositions. Dietary TAGs occur naturally, or they can be also manufactured from vegetable oils and/or animal fats by altering the fatty acids (FAs) positions in the TAGs, by interesterification. The interesterification of oils and fats, a process used by the food industry, results in enrichment of SFAs in the sn-2 position of TAGs. Our previous data reported that the interesterified fats intake promoted greater body mass gain, impaired glucose homeostasis, increased expression of cellular stress markers in liver, white adipose tissue and intestine of rodents.
