The present work aims to evaluate the content of total phenolics and flavonoids, as well as to identify phenolic compounds in Jataí bee honey from southwestern Bahia. Were estimated 0.5155 mgEAG.Kg-¹ of honey from total phenolics, 0.1978 mgEQ.Kg-¹ of flavonoids and identified, by HPLC-UV, the chlorogenic acid, caffeic acid and rutin in the honey samples.
