Abstract

The Unconventional Food Plants (UFP) Eryngium coronatum, Maranta arundinacea, and Pilea microphylla had their antioxidant activity, chemical and nutritional profiles studied. The aerial parts from E. coronatum and M. arundinacea presented expressive values of proteins; aerial parts of P. microphylla showed better results for antioxidant and chemical prospecting activity.
